Cilantro Simple Syrup

Cilantro simple syrup has a fresh, clean flavor and rich, smooth consistency. It's quick and easy to make and is great for cold drinks such as mocktails, cocktails, and my personal favorite, limeade.

Equipment

  • Small high powered blender such as a Magic Bullet
  • Small bowl
  • Fine mesh strainer
  • Storage bottle

Ingredients
  

  • 1 cup cilantro leaves and stems, about one bunch
  • 1 cup water
  • 1 cup granulated sugar

Instructions
 

  • Blend cilantro and water
    Add the cilantro and water to the blender and blend on high for 30-60 seconds or until the cilantro is fully blended.
  • Strain
    Using a fine mesh strainer, strain the cilantro, collecting the water in the small bowl. Discard the parsley.
  • Add sugar and stir
    Add the sugar to the small bowl and stir until the sugar is fully dissolved, about one minute.
  • Store
    Transfer to an airtight storage container. Store in the fridge for up 2 weeks.

Notes

To prepare the cilantro, cut off the very ends of the stems and gently rinse under cool running water. Finely chop both leaves and stems. Cilantro stems contain most of the flavor, so try to use as much of them as possible!
Instead of using granulated white sugar, you could use demerara or brown sugar. 
Initially, the syrup will look a little like a smoothie. After about 10 minutes after the sugar has dissolved, the syrup will turn a translucent, bright green color - similar to lime green jello.
