Parsley simple syrup has a fresh, clean flavor and rich, smooth consistency. It's quick and easy to make and is great for mocktails, cocktails, and my personal favorite - lemonade or limeade.
Blend parsley and waterAdd the parslely and water to the blender and blend on high for 30-60 seconds or until the parsely is fully blended.
StrainUsing a fine mesh strainer, strain the parsley, collecting the water in the small bowl. Discard the parsley.
Add sugar and stirAdd the sugar to the small bowl and stir until the sugar is fully dissolved, about one minute.
StoreTransfer to an airtight storage container. Store in the fridge for up 2 weeks.
Notes
To prepare the parsley, remove the stems and use only the leafy tops, as most of the flavor is contained in the parsley leaves. Instead of using granulated white sugar, you could use demerara or brown sugar. Initially, the syrup will look a little like a smoothie. After about 10 minutes the sugar being fully dissolved, it will turn a translucent, bright green color - similar to lime green jello.
