Pomegranate Lime Sour Mocktail Recipe

With only 5 ingredients, this mocktail is easy to shake up and serve at an intimate dinner party. It's rich, bold pomegranate and lime flavors make the drink intense, tart, and tangy. The double shake smooths out the the drink while creating a lush foam topping.

Equipment

  • Cocktail Shaker or Mason Jar with lid

Ingredients
  

  • 1 cup Pomegranate juice
  • ¼ cup Fresh lime juice
  • ¼ cup Simple syrup
  • 1 Fresh mint
  • 1 Egg white OR 2 Tablespoons canned chickpea liquid
  • Ice cubes not pebble ice

Garnishes

  • Fresh Mint Sprigs
  • Pomegranate pips (seeds)
  • Thinly sliced limes

Instructions
 

  • Shake all ingredients, except ice, for 10-20 seconds or until foam starts to form.
  • Add 1 cup of ice and shake for 10 more seconds.
  • Strain into four glasses and garnish with a lime slice and pomegranate pips.

Notes

Why shake twice? Because the first shake starts to develop the foam and thoroughly incorporate the ingredients. This first shake is considered a "dry shake", which means the ingredients are shaken without ice. The second shake happens with ice, and its purpose is to rapidly chill and slightly dilute the drink. In this case, it also "strengthens" the foam. 
Do NOT use pebble ice for the second shake. It will cause the drink to turn into almost a whipped cream consistency and be nothing but foam.
You can swap the egg white for chickpea liquid. If you want a vegan version of this drink, use the canned chickpea liquid.
