Roasted Red Pepper Sandwich with Roasted Garlic Goat Cheese Spread

Ingredients
  

  • 6 Roasted Red Peppers, sliced about 2 cups loosely packed slices
  • ½ cup Balsamic vinegar
  • ¼ cup Olive Oil
  • 4 Ciabatta rolls sliced in half
  • 12 ounces Roasted Garlic and Goat Cheese Spread about one recipe's worth if using the linked recipe
  • 1 cup Fresh cilantro, parsley or basil roughly chopped

Instructions
 

  • Marinate the peppers.
    Mix balsamic vinegar, capers with brine, and olive oil in a large plastic bag. Add the roasted red peppers to the bag and press all the air out. Chill for 2 hours or 5 days.
  • Toast the ciabatta.
    Heat oven to 450 °F
    Slice the ciabatta and arrange them on a large cookie sheet. w
    Toast the ciabatta for 5 minutes or just until warm and slightly toasted.
  • Prepare to assemble the sandwiches.
    Meanwhile, lay out the marinated roasted red peppers, goat cheese spread, and chopped herbs on your work surface.
  • Assemble the sandwiches.
    Once the ciabatta has finished toasting, make the sandwiches by spreading about 2 tablespoons of the Roasted Garlic Goat Cheese Spread on one half of the ciabatta roll, layer on about 4-5 slices of the marinated peppers, and top with fresh herbs.
  • Serve.
    Serve right away for best results, or cover loosely and serve within 30 minutes.

Notes

While the roasted red peppers are marinating, place the ziplock bag into a bowl or 9 x 13 dish before placing it in the fridge. This will help ensure that if any spills occur, the dish will catch them and your fridge will stay clean.
