    Rosemary and Orange Rimming Sugar

    This Rosemary and Orange Rimming Sugar is fresh, bright, and slightly bitter. It gives your drinks a crunch and sweetness which is a fun addition to most drinks. Make in advance and use for a variety of drinks. Give it a test drive and make my Cranberry and Rosemary Mocktail for you next event.

    Ingredients

    • Granulated sugar - Regular granulated sugar is best. Don't use a sugar substitute.
    • Fresh Rosemary - finely chop the rosemary, and then chop it some more. If you’re able to get it to the size of sugar granules, that’s ideal.
    • Orange zest - When zesting the oranges, you really want to remove just the very outside layer of the peel. It’s the vibrant orange color. You don’t want to get any of the white pith. This is generally the recommendation when a recipe calls for orange zest, but it’s especially true when it’s being used in a finish element like a rimming sugar.

    Instructions

    Finely chop the rosemary, zest the oranges, and mix them into the granulated sugar. Make sure the rosemary and orange zest are incorporated evenly.

    Substitutions

    None. Don’t substitute anything! It’s only three ingredients. If you want to add something, I recommend a few dashes of powdered rosemary from a quality source, like Penzy’s.

    Storage

    COVER TIGHTLY if not using immediately. Because this is a finishing element (meaning it’s not getting warmed, cooked, or frozen - it’s being consumed raw), you don’t want the zest or rosemary to dry out. Some natural dedication may occur from the sugar if you make this a few days in advance. But that's okay.

    Top tip

    When rimming your glasses, dip the glass rim into simple syrup if you have that option. It will help the Rosemary and Orange Rimming Sugar mixture adhere to the glass better than water or even citrus juice would.

    Ingredients
      

    • 1 cup granulated sugar
    • Zest of 3 medium oranges about 2 tablespoons, lightly packed
    • 2 teaspoon FINELY chopped rosemary about 2 Tablespoons of lightly packed rosemary leaves

    Instructions
     

    • Add sugar, finely chopped rosemary, and orange zest to a bowl, stir until combined.
    • Use immediately, or store in an airtight container for 1-2 days.
    • COVER TIGHTLY if not using immediately.

    Notes

    The rosemary should be chopped until it resembles coarsely ground black pepper. 
    Zest just the outside of the oranges so you only remove the very outside layer of the peel. 
    I recommend zesting the oranges directly into the sugar if possible. That way less of the orange oil gets lost on a cutting board or bowl. It’ll go right into the sugar.
    It is important to cover the sugar in an airtight container if not using immediately.
