Why serving smoked salmon at breakfast is ideal for a small group
When you're hosting a smaller group for a brunch party, you have a little more room to splurge on more expensive ingredients.
If you know that all your guests like smoked salmon, then you can serve this more decadent type of dish with confidence that everyone will appreciate the extra effort that went into it.
Plus, it's fun to serve a meal you and your guests are passionate about!
Crepes and Sandwiches
These are breakfast foods that require some individual assembly.
The little bit of extra effort required does lead to an impressive display when it comes time to serve breakfast or brunch to your girlfriends.

Savory and salty smoked salmon is paired with a fried egg and a tangy paprika mayo sauce for a delightfully unique breakfast sandwich.
The eggs can be fried or poached, and the bread can be toasted in advance!

This classic flavor pairing of smoked salmon and dill is perfect for a crepe filling. Although Helene recommends not making the crepes in advance, I've found that I can as long as I warm them gently before using them.
This is great for a group because you can make the crepes the night before and prepare all the filling in advance as well.
Just make sure to gently warm the crepes before filling them.
Alternatively, when it comes time to serve brunch, you can lay out all the ingredients and let your guests fill them according to their preferences.

This open-faced sandwich has the classic smoked salmon, lemon, and dill paired with the gentle flavor and texture addition of sliced avocados.
Betty recommends using pumpernickel or rye bread, which is also a classic combo for this type of breakfast sandwich.
It's great for a group because it requires no cooking and comes together in a matter of minutes.
You can make most of the sandwich, then lay out the onions, extra dill, and some lemon slices, allowing guests to customize their sandwich a bit.

Puff Pastry and Flatbread
The concept of a large, flat sheet of carby goodness, decked and layered with tasty ingredients and served to an individual or group, is an old and well-loved combo.
Sometimes known as breakfast pizzas, these are great for a group because you assemble and cook the whole thing, then cut it into portions of slices. No individual assembly or plating is required.

This is built on a large sheet of puff pastry with eggs, veggies, and salmon on top. It uses goat cheese, so it's naturally dairy-free.
It serves four people and comes together in about 30 minutes if you have thawed puff pastry ready.

This is another rendition of cheese and smoked salmon on top of a large sheet of carbs with some eggs. But instead of puff pastry, it's a flatbread.
For ease of hosting, I personally like to get pre-made flatbread from Trader Joe's.
Christina's recipe also calls for quail eggs, (which is a delightful novelty and makes eating slices of this much less messy due to the smaller size), but regular eggs work just fine. She also calls for soft boiling the eggs to achieve a nice jammy center.
Pair that with the classic dill and briny caper flavors; this will be a huge hit.
Quiches and Frittata
Both quiches and frittatas use eggs, but frittatas don't have a crust. So basically, frittat's are crustless quiches.
Quiches and frittatas are great for a group because you cook the whole thing at once, and sometimes in advance, and then serve individual slices.
FYI: these are not breakfast casseroles, but they're not far off either.

Ali's quiche has broccoli and cheddar cheese in addition to the smoked salmon, and I like that she keeps the salmon in large chunks. That helps preserve the decadent feel of biting into a tender slice of smoked salmon.
It's good for a group because it will serve 6-8, depending on the size of each slice. Plus, it's best if it's made ahead of time.
You'll need to blind-bake a pie crust, homemade or store-bought, and then bake the quiche again. Do NOT skip the blind baking step. Skipping it will result in a soggy, uncooked pie crust. Ew.

This quiche from Christina at Weekday Pescatarian uses Swiss cheese and dill. Once the crust is blind-baked, you'll layer in the ingredients, top with cheese, and bake again so the filling cooks.
Depending on the size of each slice, it will serve 6-8 guests. Plus, it's best if it's made ahead of time, and you can serve it warm or at room temperature.

A frittata is great for a group because it's similar to a quiche, but you don't need to worry about blind-baking a crust. As a result, a frittata comes together in under 30 minutes. Plus, you can use leaner ingredients if everyone is mindful of health goals.
This frittata uses ricotta and avocado in addition to smoked salmon, which is a nice flavor and ingredient profile for those wishing to incorporate more omega-3 fatty acids.
Other Smoked Salmon Recipes - Scones and Breakfast Bowl
I would not typically make the breakfast bowl or the scones for a group breakfast. But these untraditional recipes are worth a shout-out.

This recipe serves as a nice inspiration for an egg-free and gluten-free smoked salmon breakfast option.
If you're serving breakfast bowls, it's easy to set out ingredients in a buffet-style arrangement and let your guests build their own bowls.
My recommendation is to make sure each individual ingredient is seasoned and flavored well!

A flaky, tender scone is a nice way to incorporate the smoked salmon flavor without the somewhat slimy texture that can turn some people off.
Likewise, this is an excellent option if you're serving a posh, English Tea style meal.

A quick note about smoked salmon vs lox
Smoked salmon and lox are NOT the same.
Smoked salmon has been smoked, and lox has been cured in a salt-based brine or rub.

A quick note about serving eggs to a group
When serving eggs to guests, it's thoughtful to ask them how they liked their eggs cooked. Do they prefer a runny yolk? Or do they want the egg yolks cooked all the way through? Would they like fluffy scrambled eggs? Some guests may also enjoy just egg whites. In which case, save the egg yolks for another recipe. (Did you know you can freeze egg yolks?)
