Smoked Salmon is different than lox; the latter of which is considered a cured fish!
Ingredients for Smoked Salmon Breakfast Sandwich:

- Chipotle Lime Mayo - This is SO easy to make, and it's easy to double. If you make it the night before, the flavors blend really nicely.
- Smoked Salmon - I like getting mine from Costco or Trader Joe's. However, if you have a local supplier, that could be an excellent source of high-quality smoked salmon!
- Eggs - If you can get farm-fresh eggs, those are usually better than what most supermarkets offer. Be sure to check the eggs for cracks before you leave the store. Also, if you're cooking for guests, it's always best to have additional eggs on hand in case something happens and you need an extra egg or two.
- Cilantro - Discard just the ends of the stems, and then chop and use as much of the remaining stems as you can. The majority of the cilantro flavor is in the stems!
- Fresh Lemons - Adding a final spritz of lemon on top helps the cilantro flavor pop.

Hint: Rather than assemble each open-faced sandwich one at a time, do each step to all the sandwiches at the same time. Spread every toast with the chipotle mayo, then add the salmon to each toast, then topping each with an egg. It will make assembly go super fast and allow you to serve these hot.

If you want to give your guests some options to customize their sandwiches, here are some great additions.
Additions:
- Sliced Avocados - A few pieces of sliced avocado can go really nicely with this!

Equipment
A good cookie sheet and a non-stick pan or griddle are the two main things that make cooking this, especially for a group, a breeze.
Top tip
Ask your guests ahead of time if anyone has preferences about how eggs are cooked.
Rather than leave some eggs on the stove longer than others to let them cook longer (and therefore be more well done), START them at different times.
Whoever wants a well-done egg, put those on first, followed in a few minutes by those that want a runny yolk.
That way, all the eggs finish at once, and you can serve everyone at the same time.

Open-faced Smoked Salmon Breakfast Sandwich with Smoky Chipotle Lime Mayo
Ingredients
- 12 ounce package smoked salmon
- 12 slices sliced soughdough bread or English Muffins
- 12 medium eggs
- ½ bunch cilantro, chopped (about 1 cup) stems included
- 1 lemon halved
Smoked Paprika Lime Mayo
- ½ cup mayo
- 1 Tablespoon smoked chipotle powder
- 1 Tablespoon lime juice
- 1 Teaspoon garlic powder
- 1 Teaspoon onion powder
- ½ Teaspoon kosher salt or ¼ teaspoon table salt
Instructions
- Make the Chipotle mayoWhisk all the ingredients in a small bowl. Set aside for later.
- Prepare workspaceOn your work surface, lay out the following ingredients: chipotle mayo, smoked salmon, lemon halves, and chopped cilantro.
- Make the ToastPreheat oven to 350℉Lay the sliced bread on a cookie sheet in a single layer. Toast them in the oven for 4-5 minutes or until golden brown and crispy.
- Fry the EggsStart frying eggs to your guests desired doneness. Warm a non-stick pan on medium heat. Once the pan is warm, add a small amount of butter. Once slightly sizzling, crack the eggs one at a time into the pan. Cook for about 1½ - 2 minutes.
